Penne Napolitana

  • Preheat oven to 225°F.
  • In a 4” full size stainless steel food pan, place 1.5 lb of dry penne and cover with salted water (1/2” above penne)
  • Steam at 212°F with 100% steam for 15 minutes then remove from oven, drain pasta, cool ice bath and refrigerate.  
  • In large bowl, mix the pasta with 32 fl. oz of tomato sauce, pour mixture into 2” full size stainless steel food pan and cook at 300°F with 0% steam for 6 minutes.
  • Top with grated parmesan cheese and hot pepper flakes.
